Lentil Bites

Hi Everyone,

Today I’ll share with you a delicious, quick recipe of Lentils bites or you can even say “lentils meatballs”. I love eating rice, veggies, and beans, but sometimes I feel I want something else with it like these bites, a burger, a sausage… The brands available in the supermarket have tons of ingredients. They are tasty but are far from being healthy. Therefore, I prefer to eat what I make most of the time 😁

As you know, my recipes are effortless. I try to reduce the use of processed food, even spices, and flavorings, but without letting it go without flavor. We need to reduce salt in our food to reduce many diseases. Recently, I found out that salt reduces calcium absorption.

I keep these lentil bites in the freezer and bake them in the air fryer before eating. It’s so handy and delicious.

Ingredients to make the Lentil Bites

  • 1 can of lentils
  • 2 cups of oat flour
  • 1 tablespoon nutritional yeast
  • 1 tsp salt
  • 1 tsp smoked paprika
  • 1 tsp black pepper
  • 1 tsp liquid smoke (optional)

 

Making the Lentil Bite

 

Step 1: Combine!

Wash the lentils really well. Place all the ingredients in a food processor.

 

Mix for a few seconds until well combined and a dough-like is formed.

 

Step 2: Make small balls

Make small balls with the dough. With this recipe I didn’t add any extra liquid or extra oat flour, the texture was perfect for shaping. I like to place them on top of tinfoil so they won’t bind to each other.

 

Step 3: Freeze

I added all my bites in foil packaging, so they won’t freeze on each other.

 

 

After a few hours, I added them to a freeze bag, and it’s ready to be baked.

 

 

It’s so easy to get them out of the bag and it does not takes a lot of space from the freezer!

 

 

Step 4: Bake the Lentil bites

I just got enought bites for one meal. I don’t make a lot at the same time as I like them fresh! Baked them for 5 minutes in the air fryer, 200C. I spray a bit of olive oil on top, because remember this recipe is oil-free so if you want it a bit more crunchy and moist you will have to add oil.

Rice, pinto beans, vegetables, and lentil bites.

 

 

They are a bit dry but I prefer like this because I know they don’t have all the extra oil that any other recipe has. If you want them more moist add oil during the preparation and during the frying.
