Garlic Rice Noodles

This is my favorite recipe for when I’m in rush/lazy and want something to eat quickly! The dish was inspired by Asian cuisine and is really simple to prepare.

When I was making this my husband was like “what is this smell?!” 😂 I’m sure you will ask yourself the same when making it!!

This recipe has only 3 steps!!

This pasta is just perfect! I could not stop eating it. I actually added some veggies that I made before to make it more nutritious. Even after finishing eating my plate, I continued eating this pasta alone… I simply could not stop!

I believe you can enjoy this pasta with anything you like, or just make it as a side dish! My husband is eating it with chicken.

Ingredients to make the Garlic Rice Noodles

  • Rice noodles – 250g
  • Garlic – up to you, I used 4 medium cloves.
  • Salted butter – 3 tbsp
  • Coconut sugar – 1tbsp
  • Sesame seeds

 

 

To ensure they’re safe, I always buy rice noodles with gluten-free labels on the package!

I always have coconut sugar in my kitchen because I love making Asian food, but I understand this is not a common ingredient. It can be substituted with brown sugar.

Ignore the mushroom sauce, it should not be in the picture!! Only realizing it now, while writing this post 🤣🤷‍♂️

It’s so hard to find safe sesame seeds here in Ireland. The one in the picture I got on a trip to the USA. Black sesame seeds I bought in Brazil. Hope you have a brand that you feel safe eating. Always remember that these items can be easily contaminated during packaging. If you are not coeliac you don’t need to worry 😉

Making the Garlic Rice Noodles

 

Step 1: make the noodles

Always follow the instructions in your package. There is a lot of variation in the time needed to cook rice noodles.

I cooked 250g of rice noodles for this recipe.

The rice noodle that used today it was recommended 2-3 minutes in boiling water. Because I like it “al dente” I cooked it for 2 minutes. I have other brands in my kitchen that recommends 8-10 minutes, so keep an eye!

After cooking the rice noodles, I always rince it under cold water. It helps to remove the starch, and they will stick less to each other.

 

Step 2: prepare the sauce

Mince garlic. This is a critical ingredient, correct? It’s GARLIC rice noodles, however, we all know that garlic is a high FODMAP food. Therefore, I’d recommend to add the quantity that makes you feel comfortable. I only added 4 garlic cloves. Feel free to add more or less. I’d say up to 8 cloves is more than enough. More than that you must be garlicholic 😂

Add 3 tablespoons of butter to a pan. When it melts, add the minced garlic and sauté for 2 minutes. Add the coconut sugar, mix it really well. The colour will change completely! It will look weird but I swear it tastes good!

 

Step 3: combine and eat!

Add the just prepared garlic sauce to the rice noodles and mix it really well!!

Sesame seeds are my favorite topping for rice noodles. Feel free to add any greens that you like. Green onions are really famous for this recipe but, as I mentioned before, this dish has already garlic in it, I do not add extra high FOODMAP ingredients in it to avoid feeling bloated on the next day.
